Apricot Crumble Bars
This is a nice dessert treat that doesn’t take much time, or too many ingredients, to put together.
Makes 9 (large) or 16 (small) bars
What you’ll need:
- 3/4 cup butter
- 1/2 cup powdered sugar
- 1 tsp. fresh lemon zest
- 1 & 3/4 cups flour
- 1/2 cup walnuts, finely ground
- 3/4 cup apricot jam
- 1 tbsp. flour
Preheat oven to 375 degrees. Lightly grease an 8 x 8 baking dish. Cream together butter, powdered sugar, and lemon zest. Add flour and walnuts, and mix thoroughly.
Separate dough into thirds. Press 2/3 of dough into the bottom of baking dish.
Spread apricot jam over the top.
Add 1 tbsp. flour to remaining 1/3 of dough. Use your fingers to crumble the dough, and sprinkle evenly over the top of the apricot jam.
Bake for 30 minutes, or until the top starts to turn golden in color. Cool and cut into bars. Serve and enjoy!
Note: I used apricot jam, but you can use any flavor you like; raspberry, strawberry, blackberry, etc…
